How much extra does it cost to reserve a game?
If you reserve Metroid Other M at Gamestop you get an art booklet or something.

It depends. I think Game Stop is $5. There are some stores (mostly "Mom and Pop" shops) where you can pay the MSRP (for Wii games, usually $49.95) before the game comes out and they'll give you a card where you can go back on the release date and simply pick it up.

So it won't be more than 5 dollars?
Also, can reserving a game be done over the phone or does it have to be done in person?

You have to do it in person, and you'll have to pay $5 for the reservation, and you can optionally pay off the entire MSRP as well at Gamestop at the time of reservation.

Let's say I give them the 5 dollars, then badda bing, budda boom, I go the day it's released, and they don't give it to me. I'm out 5 bucks.

That's what the 5 dollars are for. It guarantees you a copy, no matter what.
